Quinoa Salad Recipe

Quinoa (keyn-wah) is a high protein gluten free grain that is finally starting to gain some popularity.  It can be used in so many different ways and there really are a lot of great recipes out there to try.  I just brought a double batch of a quinoa salad to a BBQ last night and every time I make this one it is a huge hit, so I thought I would share it with you.  Sometimes I do use different vegetables depending on who is going to be eating it and what I have on hand.  This really does not take long to prepare which is always good!

Ingredients:

1/2 cup quinoa, uncooked

2 small or Roma tomatoes or roughly 15 cherry/grape tomatoes, chopped

1 cup of spinach, chopped

1/2 cucumber, chopped

1/3 cup red onion, chopped

2 tablespoons lemon juice

2 tablespoon olive oil

1/2 teaspoon Dijon mustard

salt and pepper to taste

1 avocado chopped

2 oz goat cheese

Directions:

Place quinoa and 1 cup water in a saucepan.  Bring to a boil, then simmer on low for 10-15 minutes or until all water is absorbed. Cool (if I need to cool it fast I put it in the freezer!).  In a medium bowl combine cooked quinoa and chopped vegetables.  In a small bowl combine lemon juice, olive oil, Dijon mustard, salt and pepper and mix well.  Pour dressing over the vegetable mixture and stir.  Add avocado and goat cheese and stir to combine.

To make into a meal serve over a bed of greens and top with grilled chicken.
